Cooking for a Cause: Carrot & Orange Soup

Just in time for spring, Faye, our Director of Volunteer Services, is serving up her famous Carrot & Orange Soup. This nutritious recipe is light, fresh, and sure to please the whole family. INGREDIENTS

  • 4 tbsp butter
  • 2 cups finely chopped yellow onions
  • 12 large carrots, 1 1/2 to 2 pounds, peeled and chopped
  • 4 cups chicken stock
  • 1 cup fresh orange juice
  • Salt and freshly ground black pepper, to taste
  • Grated fresh orange zest to taste

INSTRUCTIONS


  • Prep by peeling and chopping the carrots and onions
  • Melt the butter in a pot
  • Add the onions and cook over low heat until tender and lightly colored, about 25 minutes
  • Add carrots and stock and bring to a boil. Reduce heat and simmer until carrots are very tender, about 30 minutes
  • Pour the soup into a blender and process until smooth
  • Return puree to the pot and add the orange juice
  • Season to taste with salt, pepper, and freshly grated orange zest
  • Simmer until hot
  • Serve and enjoy!
