For Black History Month, we’re celebrating culture, community, and comfort food with a special cooking demonstration by Chef Devon from CFBNJ’s Community Kitchen. Watch as he prepares cornbread and collard greens, which are traditionally eaten together. In Southern U.S. customs, this meal symbolizes a wish for prosperity and good fortune. Follow along and try it for yourself – full recipes below!

Southern-Style Collard Greens

INGREDIENTS
  • 10 lb fresh collard greens, washed, stemmed, chopped
  • 1½ lb smoked meat (optional; ham hocks, smoked turkey wings, or turkey necks)
  • 1 gallon water or low-sodium chicken stock
  • 1/3 cup apple cider vinegar
  • 1/4 cup granulated sugar
  • 1/4 cup kosher salt (adjust to taste)
  • 2 tbsp black pepper
  • 1 tbsp crushed red pepper flakes (optional)
  • 1/4 cup minced garlic
  • 3/4 lb yellow onion, diced
  • 2–3 tbsp hot sauce (optional)
INSTRUCTIONS
  1. Simmer the smoked meat: add smoked meat and liquid to a large stock pot; bring to a boil, reduce to a simmer; cook 60–90 minutes, until meat is tender and flavorful; remove meat, chop if desired, then return to pot.
  2. Add diced onions and garlic, simmer 8-10 minutes until softened.
  3. Add greens in batches, allowing them to wilt before adding more. Stir well so greens are coated in the pot liquor.
  4. Add vinegar, sugar, salt, black pepper, and red pepper flakes. Stir thoroughly.
  5. Simmer uncovered or partially covered for 60–90 minutes. Stir occasionally. Greens should be tender, not mushy.
  6. Taste and adjust salt, vinegar, or heat. Add hot sauce if using.

Cornbread

INGREDIENTS
  • 3 cups all-purpose flour
  • 3 cups corn meal
  • 2 cups granulated sugar
  • 3 tsp baking powder
  • 3 1/2 tsp salt
  • 3 cups milk
  • 1 cup + 2 tbsp vegetable oil
  • 3 eggs
  • 2 oz. honey
INSTRUCTIONS
  1. Combine dry ingredients in a bowl. Whisk together until combined.
  2. In a separate bowl, combine and lightly whisk the wet ingredients.
  3. Combine the bowls and whisk together till just combined.
  4. Place in a greased pan.
  5. Bake till golden brown crust forms on top, about 20-25 min.
  6. Allow to cool completely before portioning.
