Southern-Style Collard Greens
INGREDIENTS
- 10 lb fresh collard greens, washed, stemmed, chopped
- 1½ lb smoked meat (optional; ham hocks, smoked turkey wings, or turkey necks)
- 1 gallon water or low-sodium chicken stock
- 1/3 cup apple cider vinegar
- 1/4 cup granulated sugar
- 1/4 cup kosher salt (adjust to taste)
- 2 tbsp black pepper
- 1 tbsp crushed red pepper flakes (optional)
- 1/4 cup minced garlic
- 3/4 lb yellow onion, diced
- 2–3 tbsp hot sauce (optional)
Cornbread
INGREDIENTS
- 3 cups all-purpose flour
- 3 cups corn meal
- 2 cups granulated sugar
- 3 tsp baking powder
- 3 1/2 tsp salt
- 3 cups milk
- 1 cup + 2 tbsp vegetable oil
- 3 eggs
- 2 oz. honey
