Cooking for a Cause: Asian-Style Stuffed Peppers

INGREDIENTS

  • 6 Bell Peppers
  • 1 Small Yellow Onion
  • 2 Cups Quinoa
  • 3 Cloves Garlic
  • 1 Pound Ground Turkey or Chicken
  • 4 Scallions
  • 2 Tablespoons Sesame Oil
  • 2 Tablespoons Low Sodium Soy Sauce
  • 1/2 Teaspoon Red Pepper Flakes
  • 1 Tablespoon Ginger
  • 1/2 Teaspoon Pepper

INSTRUCTIONS


  • Preheat oven to 400 degrees
  • Heat sesame oil on medium heat
  • Add garlic, onion and ginger to pan and cook until fragrant
  • Add ground turkey/chicken, cook through (about 5 minutes)
  • Add quinoa, seasonings and scallions, and mix until combined
  • Spoon filling into hollowed peppers and bake for 15 minutes at 400 degrees
