INGREDIENTS
- 6 Bell Peppers
- 1 Small Yellow Onion
- 2 Cups Quinoa
- 3 Cloves Garlic
- 1 Pound Ground Turkey or Chicken
- 4 Scallions
- 2 Tablespoons Sesame Oil
- 2 Tablespoons Low Sodium Soy Sauce
- 1/2 Teaspoon Red Pepper Flakes
- 1 Tablespoon Ginger
- 1/2 Teaspoon Pepper
INSTRUCTIONS
- Preheat oven to 400 degrees
- Heat sesame oil on medium heat
- Add garlic, onion and ginger to pan and cook until fragrant
- Add ground turkey/chicken, cook through (about 5 minutes)
- Add quinoa, seasonings and scallions, and mix until combined
- Spoon filling into hollowed peppers and bake for 15 minutes at 400 degrees
