  • 1 Spaghetti Squash
  • 1 Tablespoon Garlic (minced)
  • 2 Tablespoons Olive Oil
  • 1/2 Cup Parmesan Cheese
  • 1 Cup Mushrooms
  • 1/2 Teaspoon Red Pepper Flakes
  • Salt and Pepper to Taste


  • Preheat oven to 400 degrees
  • Slice squash in half lengthwise
  • Season with 1 tablespoon olive oil, salt, and pepper; place cut side down on parchment paper lined baking sheet
  • Bake for 30 minutes or until lightly browned and fork tender
  • Using a fork, scrape flesh away from squash skin
  • Heat 1 tablespoon olive oil in large pan
  • Add garlic and mushrooms, cooking on medium heat until fragrant
  • Add squash, sauteing for about 2 minutes
  • Add cheese and spices, stirring until cheese is melted
