INGREDIENTS
- 1 Spaghetti Squash
- 1 Tablespoon Garlic (minced)
- 2 Tablespoons Olive Oil
- 1/2 Cup Parmesan Cheese
- 1 Cup Mushrooms
- 1/2 Teaspoon Red Pepper Flakes
- Salt and Pepper to Taste
INSTRUCTIONS
- Preheat oven to 400 degrees
- Slice squash in half lengthwise
- Season with 1 tablespoon olive oil, salt, and pepper; place cut side down on parchment paper lined baking sheet
- Bake for 30 minutes or until lightly browned and fork tender
- Using a fork, scrape flesh away from squash skin
- Heat 1 tablespoon olive oil in large pan
- Add garlic and mushrooms, cooking on medium heat until fragrant
- Add squash, sauteing for about 2 minutes
- Add cheese and spices, stirring until cheese is melted
