  • 2 cups cooked quinoa
  • 1 cup chickpeas
  • 1 diced bell pepper
  • 1 cup halved yellow cherry tomatoes
  • 1 cup shredded cabbage
  • 1/4 cup chopped cilantro
  • 1/4 cup peanut butter
  • 1 tablespoon water
  • 1 minced garlic clove
  • 1 teaspoon sesame oil
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon rice vinegar

INSTRUCTIONS


  • Start with a bowl of 2 cups cooked quinoa
  • Add 1 diced bell pepper
  • Add 1 cup halved cherry tomatoes
  • Add 1 cup chickpeas
  • Add 1 cup shredded cabbage
  • Add 1/4 cup chopped cilantro
  • Mix together
  • In a new bowl, start with 1/4 cup peanut butter
  • Add 1 tablespoon water
  • Add 1 minced garlic clove
  • Add 1 teaspoon sesame oil
  • Add 1 tablespoon low sodium soy sauce
  • Add 1 tablespoon rice vinegar
  • Mix peanut sauce together
  • Add peanut sauce into quinoa salad
