Cooking for a Cause: Spring Mango Salsa

Welcome in the spring with a quick and easy mango salsa!

INGREDIENTS

  • ½ cup diced mango chunks
  • ½ cup diced green pepper
  • ½ cup diced red bell pepper
  • ½ cup diced tomato
  • ½ cup cut corn
  • ½ cup drained and rinsed black beans
  • 4 tsp minced jalapeño pepper
  • ¼ cup cider vinegar
  • ¼ cup chopped cilantro
  • 2 tbsp diced red onion
  • 1 lime juiced
  • 1 ½ tsp sugar (optional)
  • ¼ tsp salt and pepper  
  • Combine all ingredients and mix thoroughly
  • Cover and refrigerate until ready to serve
  • Toss prepared fruits, vegetables, and cilantro with lime solution
  • Garnish with chiffonade mint!
