Welcome in the spring with a quick and easy mango salsa!
INGREDIENTS
- ½ cup diced mango chunks
- ½ cup diced green pepper
- ½ cup diced red bell pepper
- ½ cup diced tomato
- ½ cup cut corn
- ½ cup drained and rinsed black beans
- 4 tsp minced jalapeño pepper
- ¼ cup cider vinegar
- ¼ cup chopped cilantro
- 2 tbsp diced red onion
- 1 lime juiced
- 1 ½ tsp sugar (optional)
- ¼ tsp salt and pepper
INSTRUCTIONS
- Combine all ingredients and mix thoroughly
- Cover and refrigerate until ready to serve
- Toss prepared fruits, vegetables, and cilantro with lime solution
- Garnish with chiffonade mint!
