Cooking for a Cause: Veggie Burrito Bowl

In this month’s Cooking for a Cause recipe, we are sharing a colorful and nutrient-dense bowl that we hope will inspire you to incorporate more fresh foods into your diet. INGREDIENTS

(4 servings)

  • 3 cups brown rice
  • 1 cup yellow corn
  • 1 cup black beans
  • 1 cup diced tomatoes
  • 1 small white onion
  • 2 bell peppers
  • 1 avocado
  • 1 clove garlic
  • 1 tablespoon olive oil
  • 1/2 teaspoon black pepper
  • 1/4 cup cilantro

INSTRUCTIONS


  • Heat olive oil
  • Add garlic
  • Add onions & cook until translucent
  • Add 2 bell peppers
  • Add 1/2 teaspoon of black pepper
  • Get ready for 4 burrito bowls in airtight containers
  • In big bowl, mix 3 cups cooked brown rice & 1/4 cup cilantro
  • Get a single serving size bowl ready
  • Transfer 3/4 cup brown rice & cilantro mix into it
  • Add 1/4 cup cooked black beans from 1 cup batch
  • Add 1/4 cup cooked yellow corn from 1 cup batch
  • Add 1/4 cup diced tomatoes from 1 cup batch
  • Add 1/4 of the sautéed bell peppers
  • Add 1/4 of an avocado
  • Garnish with cilantro
  • Enjoy within 7 days!
