Cooking for a Cause: Grilled Chipotle Fish Tacos with Tequila-Lime Slaw and Avocado Crema

Fish Tacos

  • 2 lbs Salmon or any firm, sustainable fish variety
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp ground coriander
  • 7 oz. can, chipotles in adobe
  • 1 lime, zested and juiced
  • 1 tbsp honey
  • 2 tbsp extra virgin olive oil
  • 1 clove fresh garlic, crushed
  • 1/2 oz. fresh ginger, grated
  • Salt and pepper, to taste
  • 12 flour tortillas

Tequila-Lime Slaw

  • 3 oz. high quality tequila
  • 2 fresh limes, juiced
  • 1/4 cup apple cider vinegar
  • 1 tbsp honey
  • 1/4 cup canola oil
  • 1 tsp celery seeds
  • 1/4 head green cabbage, thinly sliced
  • 1/4 head red cabbage, thinly sliced
  • 1/4 cup cilantro, chopped
  • Salt and pepper, to taste

Avocado Crema

  • 1 cup sour cream
  • 1 avocado, pitted and peeled
  • 1 lime, zested and juiced
  • 1/2 tsp ground cumin


  • Fresh radish
  • Mexican cheese
  • Sliced jalapenos
  • Lime wedges


  • Combine cumin, paprika, coriander, chipotles, lime zest and juice, honey, olive oil, garlic, ginger, salt, and pepper in a food processor and puree until smooth
  • Pour the mixture over the fish and marinate for 10-20 minutes
  • Cook the fish in the oven at 350 degrees for 20 minutes
  • While the fish marinates and cooks, prepare the slaw by combining the tequila, lime juice and zest, apple cider vinegar, honey, canola oil, celery seeds, cilantro, salt, and pepper in a bowl
  • Add the cabbage and stir until combined. Set aside.
  • Prepare the crema by combining sour cream, avocado, lime zest and juice, and cumin in a bowl. Mix until fully combined.
  • Char the tortillas over the grill for 30 seconds on each side
  • Assemble the tacos, placing fish, slaw, and crema, along with garnishes of choice, onto each tortilla
