INGREDIENTS
Fish Tacos
- 2 lbs Salmon or any firm, sustainable fish variety
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp ground coriander
- 7 oz. can, chipotles in adobe
- 1 lime, zested and juiced
- 1 tbsp honey
- 2 tbsp extra virgin olive oil
- 1 clove fresh garlic, crushed
- 1/2 oz. fresh ginger, grated
- Salt and pepper, to taste
- 12 flour tortillas
Tequila-Lime Slaw
- 3 oz. high quality tequila
- 2 fresh limes, juiced
- 1/4 cup apple cider vinegar
- 1 tbsp honey
- 1/4 cup canola oil
- 1 tsp celery seeds
- 1/4 head green cabbage, thinly sliced
- 1/4 head red cabbage, thinly sliced
- 1/4 cup cilantro, chopped
- Salt and pepper, to taste
Avocado Crema
- 1 cup sour cream
- 1 avocado, pitted and peeled
- 1 lime, zested and juiced
- 1/2 tsp ground cumin
Garnishes
- Fresh radish
- Mexican cheese
- Sliced jalapenos
- Lime wedges
